Method

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish lightly with non-stick spray or butter.
  2. In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, sugar, cinnamon, nutmeg, ginger, and cloves. Whisk until smooth and well blended.
  3. Pour the pumpkin mixture into the prepared baking dish, spreading it out evenly.
  4. Sprinkle the yellow cake mix evenly over the pumpkin mixture, ensuring full coverage.
  5. Drizzle the melted butter evenly over the top of the cake mix, covering as much surface area as possible.
  6. If desired, sprinkle chopped pecans over the top for added crunch and flavor.
  7. Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the filling is set.
  8. Allow the cake to cool for at least 15 minutes before serving. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Notes

For a nut-free version, omit the pecans. You can also substitute pumpkin pie spice for the individual spices.
