Ingredients
  

  • 1 ½ cups whole wheat pastry flour or gluten-free baking blend
  • ½ cup unflavored or vanilla protein powder
  • ¼ cup granulated erythritol or monk fruit sweetener
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsweetened almond milk
  • ¼ cup unsweetened applesauce
  • 1 large egg, room temperature
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil
  • ½ cup sugar-free fruit preserves
  • 1 tablespoon chia seeds (optional)
  • ¼ cup powdered erythritol or monk fruit sweetener (for glaze)
  • 2-3 tablespoons unsweetened almond milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)
  • 1 tablespoon freeze-dried fruit powder (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease the donut pan.
  2. In a large bowl, whisk together the dry ingredients: flour, protein powder, erythritol, baking powder, baking soda, and salt.
  3. In another bowl, mix together the wet ingredients: almond milk, applesauce, egg, apple cider vinegar, and vanilla extract.
  4. Combine the wet and dry ingredients, adding melted coconut oil. Mix gently until just combined.
  5. Fill the donut pan with the batter and bake for 10-12 minutes until golden.
  6. Let the donuts cool in the pan for 5 minutes before transferring to a wire rack.
  7. Prepare the jelly filling and fill the cooled donuts carefully.
  8. Make the protein glaze and drizzle it over the filled donuts before serving.

Notes

Make sure to let donuts cool completely before filling. Adjust sweetness and flavors as needed.
