Ingredients

Base
  • 150 g ground almonds (almond meal) Low in carbs, high in protein and healthy fats
  • 150 g gluten-free flour blend Preferably a blend with brown rice or sorghum
  • 75 g rolled oats Use certified gluten free oats if needed
  • 2 heaped teaspoons baking powder
  • 0.25 teaspoon bicarbonate of soda (baking soda)
  • 0.25 teaspoon salt
  • 300 ml unsweetened almond milk Any unsweetened plant milk works
  • 1 tablespoon apple cider vinegar Lemon juice works as a substitute
  • rolled oats Optional, for topping

Method

  1. Preheat oven to 180°C (350°F) and line a one-pound loaf tin with parchment paper, leaving overhang for easy removal.
  2. In a large mixing bowl, whisk together ground almonds, gluten-free flour blend, rolled oats, baking powder, bicarbonate of soda, and salt.
  3. Pour in unsweetened almond milk and apple cider vinegar. Stir with a spatula or wooden spoon until just combined. Avoid overmixing.
  4. Transfer the thick batter into the prepared loaf pan, spreading evenly.
  5. Sprinkle extra rolled oats on top for a rustic finish (optional).
  6. Bake for 40–45 minutes, until golden and a skewer inserted in the center comes out clean.
  7. Cool in the tin for 10 minutes, then lift out using parchment and transfer to a wire rack to cool completely before slicing.

Notes

For best results, cool the bread completely before slicing to prevent a gummy texture. Store in an airtight container at room temperature for up to 3 days, or slice and freeze for up to 3 months. To further boost nutrition, add up to 1/2 cup seeds or chopped nuts to the batter.
