Ingredients

Chicken and Marinade
  • 1 pound boneless skinless chicken breasts pounded to an even thickness
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice about one whole lime
  • 1 teaspoon lime zest zest from one lime
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon chipotle chili powder optional for extra heat
  • 0.25 teaspoon black pepper
Avocado Salsa
  • 2 ripe avocados chopped
  • 1 cup cherry tomatoes quartered
  • 1 ear sweet corn kernels removed
  • 0.33 cup red onion finely chopped
  • 0.5 red bell pepper chopped
  • 1 jalapeño diced, seeds optional
  • 2 tablespoons fresh cilantro chopped
  • 1 clove garlic minced
  • 2 tablespoons lime juice
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper or more to taste

Method

  1. Mix all marinade ingredients in a small bowl. Coat chicken and marinate for 30 minutes or up to 8 hours. Bring to room temperature before cooking.
  2. Choose your cooking method: Grill for 5–7 minutes per side; Stovetop—sear for 4 minutes, then cover and cook 5–7 minutes; Bake at 400°F for 20–25 minutes; Air fry at 375°F for 10–12 minutes, flipping halfway. Cook to 165°F internal temp.
  3. To make salsa: mix all ingredients except avocado and chill for 30 minutes. Gently fold in chopped avocado just before serving. Adjust seasoning.
  4. Let chicken rest 5 minutes, slice, and top with your choice of salsa or sauce. Serve with sides like rice, beans, or tortilla strips.

Notes

Use fresh lime juice for best flavor. Mix avocados into the salsa just before serving to prevent browning. Swap mango into the salsa for a fruity twist. Chicken thighs can be used as an alternative to breasts.
