Ingredients
Method
- If not already cooked, poach or bake chicken breasts until thoroughly cooked, then shred the chicken into fine pieces.
- In a large mixing bowl, combine shredded chicken, black beans, frozen corn, red bell pepper, red onion, shredded cheese (if using), and fresh cilantro.
- Season the filling with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix thoroughly and adjust seasonings as needed.
- Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2-3 tablespoons of filling slightly below the center.
- Fold the bottom corner over the filling, tucking it snugly, then fold in the left and right corners toward the center. Roll tightly upwards towards the remaining corner, brushing the top corner with water to seal. Repeat for all wrappers.
- For baking, preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly brush each eggroll with oil and arrange them in a single layer. Bake for 18-25 minutes, flipping halfway through.
- For air frying, preheat the air fryer to 375°F (190°C). Lightly brush each eggroll with oil and place them in the basket in a single layer. Air fry for 10-15 minutes, flipping halfway through.
- Let the eggrolls cool slightly before serving warm.
Notes
Ensure the chicken filling isn't overly wet. Don't overfill the wrappers to avoid tearing. A tight roll and a firm seal are essential. Preheat your cooking method properly for the best crispiness.
