Ingredients

Base
  • 2 tablespoons chia seeds
  • 0.5 cup boiling water
  • 0.5 cup plant-based milk such as almond, soy, or oat
  • 0.25 cup olive oil
  • 0.5 cup unsweetened applesauce
  • 1 tablespoon lemon juice
  • 1 cup grated carrots
Sweetness and Structure
  • 1 cup soft brown sugar
  • 2 cups self-raising flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
Flavor
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
Texture and Crunch
  • 1 cup chopped walnuts

Method

  1. Preheat oven to 180°C (356°F). Grease and line a cake tin with baking paper.
  2. Place chia seeds in a mixing bowl. Add boiling water, stir well, and let sit for 5 minutes to form a gel.
  3. In another bowl, sift together flour, cinnamon, nutmeg, baking soda, and salt. Add brown sugar and break up lumps. Stir in chopped walnuts.
  4. To the soaked chia, add plant milk, olive oil, applesauce, lemon juice, and grated carrots. Mix until combined.
  5. Gently combine wet and dry ingredients using a spatula. Mix until no dry spots remain, but do not overmix.
  6. Pour batter into prepared tin. Smooth the top and bake for 45 minutes or until a toothpick comes out clean.
  7. Let cool in tin for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store frosted cake in the fridge, unfrosted in an airtight container at room temperature. For a protein boost, add Greek yogurt, cottage cheese, protein powder, or quinoa/hemp hearts.
