Method
 

  1. Brew 2 cups of your chosen herbal tea and allow it to cool slightly until warm but not boiling.
  2. Transfer the warm tea to a medium saucepan and whisk in the honey (or maple syrup) until fully dissolved.
  3. Sprinkle the gelatin powder evenly over the surface of the tea and let it sit undisturbed for 2-3 minutes for the gelatin to bloom.
  4. Place the saucepan on low heat and gently stir the mixture until the gelatin completely dissolves (do not boil).
  5. Add the collagen powder and lemon juice (if using), and stir until fully incorporated.
  6. Remove the mixture from heat and let it cool slightly for 2-3 minutes.
  7. Pour the liquid into silicone molds or a shallow glass dish lined with parchment paper.
  8. Refrigerate the molds or dish for at least 2 hours, or until the gummies are fully set.
  9. Carefully remove the gummies from the molds or slice them into bite-sized pieces if using a glass dish.
  10. Store the gummies in an airtight container in the refrigerator for up to 7 days.

Notes

You can experiment with different herbal teas for unique flavors. For a vegan option, use agar-agar instead of gelatin.
