Method
 

  1. Pour 1 cup of the cold water into a medium bowl and sprinkle the unflavored gelatin evenly over the top. Let it sit for 2 minutes to bloom.
  2. Add the boiling water and stir until the gelatin is fully dissolved.
  3. Stir in the sugar-free flavored gelatin mix until smooth, then add the remaining 1 cup cold water and the lemon juice. If using chia seeds, stir them in now.
  4. Pour the mixture into a shallow dish, silicone mold, or small serving cups.
  5. Refrigerate for 2 to 4 hours, or until firmly set.
  6. Cut into cubes or unmold the gelatin snack. Top with fresh berries or sliced fruit if desired, and serve chilled.

Notes

For the best texture, make sure the gelatin is fully dissolved before chilling. You can use any sugar-free fruit-flavored gelatin mix, and adjust the lemon juice for a brighter flavor. Chia seeds are optional but add a little texture.
