Method
 

  1. Pour 1/2 cup of the fruit juice into a small bowl and sprinkle the gelatin evenly over the top. Let it bloom for 5 minutes until the surface looks thick and spongy.
  2. Meanwhile, warm the remaining 1 1/2 cups of fruit juice in a small saucepan over low heat until hot but not boiling.
  3. Whisk the bloomed gelatin into the warm juice until completely dissolved and smooth.
  4. Stir in the honey or maple syrup, lemon juice, and pinch of salt, if using. Taste and adjust sweetness as needed.
  5. Pour the mixture into a small dish, silicone mold, or shallow container. If desired, top with fresh berries or a little citrus zest.
  6. Refrigerate for at least 2 hours, or until fully set and firm.
  7. Cut into cubes or unmold and serve chilled.

Notes

For the cleanest texture, use unsweetened juice and avoid boiling it after the gelatin is added. If you prefer a sweeter snack, add the honey or maple syrup to taste. Fresh berries, orange zest, or lemon zest make a simple topping.
