  1. In a small saucepan over medium heat, whisk together the plant-based milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt.
  2. Heat the mixture until steaming, whisking often, but do not let it boil.
  3. If you want a frothier drink, use a whisk or milk frother to blend the pumpkin milk mixture until smooth and slightly foamy.
  4. Divide the brewed coffee between two mugs.
  5. Pour the warm pumpkin spice milk mixture evenly over the coffee.
  6. Top with dairy-free whipped topping and a light sprinkle of pumpkin pie spice, if desired.

Notes
