Ingredients

  • 8 slices whole-grain sandwich bread
  • 4 oz light cream cheese or plain Greek yogurt
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • ½ tsp garlic powder
  • ¼ tsp fresh ground black pepper
  • Pinch of sea salt (optional, to taste)
  • 4 oz thinly sliced smoked turkey breast or rotisserie chicken breast
  • ½ medium English cucumber, very thinly sliced
  • 2-3 small radishes, very thinly sliced (optional)
  • Small handful of fresh spinach or arugula leaves

Method

  1. In a small mixing bowl, combine the light cream cheese (or Greek yogurt), fresh dill, chives, garlic powder, black pepper, and optional sea salt. Mix until smooth.
  2. Lay out the whole-grain bread slices and trim the crusts if desired.
  3. Spread a generous layer of the herbed cream cheese mixture on one side of each bread slice.
  4. Layer the sliced smoked turkey breast, cucumber, radish, and spinach on four bread slices.
  5. Top with the remaining bread slices, spread-side down, to form sandwiches. Press down lightly.
  6. Cut each sandwich into bite-sized pieces or use a heart-shaped cookie cutter.
  7. Chill the sandwiches in the fridge for 15-30 minutes before serving.

Notes

This recipe can be made 4-6 hours in advance. Keep the spread and sliced vegetables separate if preparing further in advance.
