Ingredients

For the Dough
  • 1 cup blanched almond flour
  • 1 1/2 cups shredded mozzarella cheese full-fat works best
  • 1/2 tsp black pepper or to taste
  • 1/2 tsp smoked paprika optional
  • 1/2 tsp garlic powder optional
  • 1/2 tsp onion powder optional

Method

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. In a microwave-safe bowl, melt the shredded mozzarella in short bursts, stirring until smooth (about 1-2 minutes).
  3. In a mixing bowl, combine the almond flour, melted mozzarella, and seasonings. Stir and knead until a dough forms.
  4. Place the dough between two sheets of parchment paper and roll it out to 1/16 inch thickness using a rolling pin.
  5. Cut the dough into triangles using a sharp knife or pizza cutter, keeping the sizes uniform for even baking.
  6. Arrange the triangles on the lined baking sheet without overlapping. Bake for 12-15 minutes until golden on the edges.
  7. Allow the chips to cool completely on the baking sheet to finish crisping up before serving or storing.

Notes

Use freshly shredded mozzarella for smoother melting and better dough texture. Work quickly while the cheese is warm. Store chips in an airtight container at room temperature for up to one week.
