Ingredients

Dry Ingredients
  • 2 cups almond flour
  • 0.25 cup tapioca flour
  • 0.25 cup flaxseed meal
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 tablespoon chia seeds
Wet Ingredients
  • 1 cup mashed bananas use ripe with brown spots
  • 2 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 0.5 cup coconut milk
  • 0.33 cup honey
  • 4 tablespoons coconut oil softened

Method

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper, leaving two sides longer for easy lifting.
  2. In a large bowl, mix almond flour, tapioca flour, flaxseed meal, baking soda, salt, and chia seeds until well combined.
  3. In another bowl, cream together coconut oil and honey using a hand mixer until smooth.
  4. Add eggs one at a time to the creamed mixture, beating well after each addition.
  5. Stir in mashed bananas, vanilla extract, and coconut milk until the mixture is fully blended and smooth.
  6. Combine the wet and dry mixtures and stir just until a smooth batter forms. Do not overmix.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the cake cool in the pan on a wire rack before lifting it out and slicing.

Notes

For a dairy-free option, substitute Greek yogurt with plain coconut yogurt and use plant-based protein powder. To make muffins, divide the batter into muffin tins and bake for 20–25 minutes.
