Ingredients

For the Swirl
  • 1/4 cup firmly packed brown sugar or coconut sugar
  • 1/4 cup granulated sugar or erythritol
  • 2 tbsp ground cinnamon
For the Bread
  • 1 cup granulated sugar, coconut sugar, or monk fruit blend
  • 2 cups gluten-free all-purpose flour blend King Arthur Measure for Measure or Bob’s Red Mill 1-to-1 recommended
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp ground flaxseed or chia seeds mixed with 3 tbsp water for flax or chia egg
  • 1 cup plant milk almond, soy, or oat milk
  • 1/3 cup vegan butter or coconut oil melted and cooled
  • 1/2 tsp vanilla extract

Method

  1. Prepare the Swirl: In a small mixing bowl, combine the brown sugar, granulated sugar, and cinnamon. Stir until evenly blended. Set aside.
  2. Prepare the Bread Batter: Preheat oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan. In a large mixing bowl, whisk together sugar, flour blend, baking powder, and salt. Make a well in the center.
  3. In a medium bowl, prepare the flax or chia egg. Add plant milk, melted vegan butter or coconut oil, and vanilla extract. Mix until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined.
  5. Assemble the Bread: Pour half the batter into the loaf pan. Sprinkle half of the cinnamon mixture over it. Add remaining batter and top with remaining cinnamon mixture.
  6. Drag a knife or spatula through the batter vertically, then horizontally to create a swirl.
  7. Bake and Cool: Bake for 50–60 minutes or until golden brown and a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a lighter version, replace the vegan butter or coconut oil with unsweetened applesauce. Tent with foil during baking if the top browns too quickly. Store at room temperature for up to 3 days, refrigerate for 1 week, or freeze for up to 3 months.
