Ingredients

Dry Ingredient Blend
  • 1.5 cups fine almond flour
  • 0.75 cups gluten-free oat flour blend rolled oats if making your own
  • 0.75 cups low-glycemic granulated sweetener such as monk fruit or erythritol blend
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground nutmeg
Wet Ingredient Mixture
  • 0.75 cups 100% pure pumpkin puree not pumpkin pie filling
  • 0.5 cups unsweetened applesauce
  • 0.25 cups neutral-flavored oil such as avocado or light olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon pure vanilla extract
Fresh Apple Component
  • 1.5 cups peeled, cored, and diced crisp apple about 2 medium apples; Honeycrisp or Granny Smith

Method

  1. Preheat your oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper, letting some hang over the sides.
  2. In a large bowl, whisk together almond flour, oat flour, sweetener, cinnamon, baking powder, baking soda, ginger, salt, and nutmeg until evenly mixed.
  3. In a medium bowl, stir together pumpkin puree, applesauce, oil, vinegar, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients. Gently fold together until just combined. Do not overmix.
  5. Fold in the diced apples until evenly distributed. The batter will be thick.
  6. Spoon the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 55–60 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Let the bread cool in the pan for 15 minutes. Then lift it out using the parchment and cool completely on a wire rack before slicing.

Notes

For a nutty crunch, fold in chopped walnuts or pecans. Sprinkle pumpkin seeds on top for a decorative finish. This bread is wonderful toasted with almond butter or coconut yogurt. Granny Smith or Honeycrisp apples work best for texture and flavor. Store at room temperature for 3 days, refrigerated for a week, or freeze for up to 3 months.
