Ingredients

Base
  • 1 cup dried split peas (green or yellow) rinsed and drained
  • 2 2/3 cups water preferably filtered
  • 1/4 tsp salt optional, for added flavor

Method

  1. 1. Soak the split peas: Combine the rinsed split peas and water in a medium bowl. Cover loosely and let soak for 6 to 12 hours at room temperature.
  2. 2. Blend into a smooth batter: Do not drain the peas. Pour all contents into a blender with optional salt and blend on high for 2–3 minutes until completely smooth.
  3. 3. Preheat and pour: Heat a nonstick or cast iron skillet over medium, then reduce to low. Pour 1/3 cup batter into the pan and spread into a 6-inch circle.
  4. 4. Cook and flip: Cook for 2–3 minutes until the surface looks dry. Flip and cook for 1 more minute until golden.
  5. 5. Cool and repeat: Transfer to a cooling rack and let cool before stacking. Repeat with remaining batter.

Notes

Use a high-quality nonstick skillet and keep heat low to prevent sticking. Add more water if the batter is too thick. For faster prep, use the quick soak method: soak peas in boiling water for 30 minutes, then add cold water before blending.
