Method
 

  1. Pour the cold water into a small bowl and sprinkle the gelatin over the top. Let it sit for 2 to 3 minutes to soften.
  2. Heat the fruit juice in a small saucepan over medium heat until warm, but do not let it boil. Stir in the sugar and lemon juice, if using.
  3. Add the softened gelatin to the warm juice and stir until completely dissolved.
  4. Pour the mixture into a shallow square or rectangular dish to make block shapes.
  5. Refrigerate for at least 2 hours, or until fully set and firm.
  6. Cut the jelly into blocks and serve cold.

Notes

For the best texture, make sure the juice is warm rather than boiling before adding the gelatin. You can use any fruit juice or flavored drink that you enjoy.
