Ingredients

  • 4-5 large ripe Valencia oranges
  • 3 tablespoons unflavored gelatin powder
  • 2 cups water, divided
  • 1/4 to 1/2 cup natural sweetener (e.g., erythritol, stevia blend, or raw honey)
  • 1 tablespoon fresh lemon juice
  • Pinch of sea salt

Method

  1. Zest one Valencia orange, then juice all (approx. 1.5 cups). Strain juice thoroughly.
  2. In a medium saucepan, sprinkle gelatin over 1 cup of cold water and let it bloom undisturbed for 5-10 minutes.
  3. Place the saucepan over low heat and whisk gently until the gelatin fully dissolves (2-3 minutes).
  4. Remove from heat and stir in strained orange juice, remaining 1 cup cold water, lemon juice, sweetener, and sea salt.
  5. Pour the mixture into a chosen dish or molds.
  6. Refrigerate for at least 4-6 hours, or overnight, until set.
  7. Once set, cut into portions or unmold and serve chilled.

Notes

Ensure to bloom gelatin properly and avoid boiling to maintain the texture. Store in an airtight container; lasts 3-5 days in the fridge.
