Ingredients
  

  • 2 cups fresh strawberries, hulled and quartered
  • 1 cup unsweetened almond milk
  • 1/2 cup water
  • 2 tablespoons unflavored gelatin powder
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon liquid stevia or erythritol blend
  • Pinch of salt
  • Optional: Fresh mint sprigs for garnish

Method
 

  1. In a blender, combine the hulled and quartered strawberries with 1/4 cup of water. Blend until smooth.
  2. Pass the strawberry puree through a fine-mesh sieve into a medium saucepan, pressing down to extract all the liquid, and discard the pulp.
  3. In a small bowl, sprinkle gelatin over 1/4 cup of almond milk and let it bloom for 5-10 minutes.
  4. Add the remaining almond milk, 1/4 cup water, vanilla extract, stevia, and salt to the saucepan. Whisk gently to combine.
  5. Heat the mixture over medium-low heat, stirring constantly, until just warm. Add the bloomed gelatin and whisk until completely dissolved.
  6. Remove from heat and pour the mixture into an 8x8 inch dish or individual ramekins.
  7. Chill in the refrigerator for at least 4 hours or preferably overnight until set.
  8. Slice the gelatin into squares or invert ramekins onto plates, garnishing with mint sprigs or extra strawberry slices if desired.

Notes

Use fresh strawberries for best flavor. Adjust sweetener to taste. Store in an airtight container in the refrigerator for up to 3-4 days.
