  • 2 envelopes of unflavored gelati
  • 1 can (12 oz) of chilled evaporated milk
  • 1/2 cup sugar substitute (e.g., erythritol or stevia blend)
  • 1 tsp vanilla extract

Method

  1. In separate bowls, dissolve each packet of sugar-free gelatin in 1 cup of boiling water, then add 1 cup of cold water to each.
  2. Pour the colored gelatin mixtures into shallow containers and refrigerate for 3-4 hours until firm.
  3. Cut the firm colored gelatin into small cubes.

  5. Add 1.5 cups of boiling water to the bloomed gelatin and whisk until dissolved.
  6. Cool the gelatin mixture slightly, then whisk in the chilled evaporated milk, sugar substitute, and vanilla extract.
  7. Arrange the colored gelatin cubes in a 9x13 inch dish, then gently pour the creamy mixture over the cubes.
  8. Refrigerate for at least 4-6 hours, preferably overnight, until set.
  9. Cut and serve chilled.

Notes

Ensure gelatin layers are entirely cooled before combining to maintain structure. Cover tightly when storing in the refrigerator.
