Spinach & Artichoke Wonton Cups

Method
 

  1. Preheat the oven to 350°F (175°C). Lightly grease a 24-cup mini muffin tin.
  2. Press one wonton wrapper into each muffin cup, gently folding the edges as needed to form a cup. Brush lightly with olive oil or melted butter.
  3. Bake the wonton cups for 5 minutes, or until just starting to turn golden. Remove from the oven and set aside.
  4. In a medium bowl, mix the cream cheese, sour cream, mayonnaise, spinach, artichoke hearts, mozzarella, Parmesan, garlic, onion powder, salt, black pepper, and red pepper flakes if using until well combined.
  5. Spoon the filling evenly into the pre-baked wonton cups, filling each almost to the top.
  6. Bake for 10 to 12 minutes, until the filling is hot and bubbly and the wonton edges are crisp and golden brown.
  7. Let cool in the pan for 2 to 3 minutes, then carefully remove and serve warm.

Notes

Make sure the spinach is very well squeezed dry to prevent soggy cups. The wonton shells can be pre-baked a few hours ahead, then filled and baked just before serving.
