Method

  1. Boil 2 cups of water in a medium pot and cook the spicy buldak ramen noodles according to the package instructions. Do not add the seasoning packet yet. Drain the noodles and set aside.
  2. In a small bowl, whisk together the egg yolk, heavy cream, milk, and Parmesan cheese until smooth. Set this aside.
  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Lower the heat to medium-low and add the cooked noodles to the skillet. Stir in the spicy buldak seasoning packet and mix well to coat the noodles evenly.
  5. Gradually pour the egg yolk mixture into the skillet while stirring constantly to prevent the egg from scrambling. Cook for 1-2 minutes, allowing the sauce to thicken and coat the noodles.
  6. Season with black pepper and adjust the spice level if desired by adding more buldak sauce or chili flakes.
  7. Remove from heat and garnish with cooked bacon bits or sliced sausage and chopped parsley, if using.
  8. Serve the Spicy Buldak Carbonara immediately while warm and creamy.

Notes

For a less spicy version, use half the buldak seasoning packet or add more milk to balance the heat.
