Ingredients

  • One 8-10 pound fully cooked bone-in ham
  • 1 cup honey
  • 1/2 cup dark brown sugar
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cloves
  • Pinch of cayenne pepper (optional)

Method

  1. Preheat your oven to 325°F (160°C). Prepare the ham by scoring it in a diamond pattern if it has a rind.
  2. Add about 1/2 cup of water to the bottom of the roasting pan, cover the ham with aluminum foil, and bake for 10-12 minutes per pound until it reaches 120°F (49°C).
  3. Prepare the glaze by combining honey, dark brown sugar, Dijon mustard, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, and ground cloves in a small saucepan. Simmer until thickened.
  4. Remove the ham from the oven, discard the foil, increase the temperature to 375°F (190°C), and apply a generous layer of glaze.
  5. Bake uncovered, basting with more glaze every 15-20 minutes until the ham reaches 140°F (60°C) and the glaze is caramelized.
  6. Let the ham rest for 15-20 minutes under foil before carving and serving.

Notes

Ensure the ham is completely cooled before storing. Store in airtight containers and it will last in the refrigerator for 3-5 days.
