Ingredients
  

  • 1/2 cup popcorn kernels
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/4 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 2 tablespoons coconut oil or vegetable oil

Method
 

  1. Pop the popcorn using coconut oil in a large heavy-bottomed pot and transfer to a large bowl.
  2. Prepare baking sheets lined with parchment paper.
  3. In the same pot, combine unsalted butter, granulated sugar, brown sugar, and corn syrup. Stir over medium heat until melted.
  4. Bring mixture to a boil and insert a candy thermometer. Boil until the caramel reaches 250°F.
  5. Carefully add heavy cream while stirring, and boil until it returns to 240°F.
  6. Remove from heat and stir in vanilla extract and sea salt, then add baking soda and mix well.
  7. Pour hot caramel over popcorn and toss to coat evenly.
  8. Spread popcorn on baking sheets and sprinkle with additional sea salt.
  9. Allow to cool completely, then break into pieces.
