Ingredients

Main Ingredients
  • 1 English cucumber (or 2 to 3 Kirby cucumbers) peeled and thinly sliced
  • 3 garden fresh tomatoes cut into wedges
  • 1 sweet onion thinly sliced
Dressing
  • 1 cup white vinegar
  • 2 tablespoons vegetable or olive oil
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Equipment

  • Large bowl
  • Medium bowl
  • Whisk

Method

Instructions
  1. Combine the thinly sliced cucumbers, tomatoes cut into wedges, and thinly sliced sweet onion in a large bowl.
  2. In a separate medium bowl, whisk together the white vinegar, vegetable or olive oil, water, sugar, salt, and pepper to create the dressing. Pour this dressing over the combined vegetables and gently toss to ensure everything is evenly coated. Cover the bowl and refrigerate for at least 1 hour, tossing occasionally, before serving to allow the flavors to meld.

Notes

For best flavor, allow the salad to chill for at least an hour, or even overnight, allowing the flavors to meld. You can adjust the amount of sugar and salt to your taste.
