Ingredients
Method
- Soak the Lentils: Place rinsed lentils in a bowl and cover with water. Soak at room temperature for 6–12 hours.
- Do Not Drain: Keep the soaking water to blend with the lentils—it helps create the right batter consistency.
- Blend the Batter: Add lentils and soaking water to a high-speed blender. Blend on high until smooth and slightly fluffy. Add salt or flavorings if using.
- Heat the Pan: Warm a non-stick or cast iron skillet over medium heat until hot.
- Pour and Spread: Pour 1/4 cup of batter into the center of the pan. Spread into a six-inch circle using the back of a spoon.
- Cook and Flip: Cook for 1–1.5 minutes until the surface is dry and edges lift. Flip and cook another minute.
- Cool and Repeat: Transfer to a wire rack. Repeat with remaining batter. Makes about 8 tortillas.
Notes
Whole red lentils work just as well and naturally split while soaking. Avoid canned lentils as they don’t create the right texture. Store cooled tortillas at room temperature for 1 day or refrigerate/freeze for longer. Reheat in a skillet or microwave before serving.
