Equipment

  • Mixing bowl
  • Whisk
  • 9x5 inch loaf pan
  • Parchment paper
  • Wire rack
  • Oven

Method

  1. Preheat the oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In a large bowl, whisk the granulated sugar, brown sugar, pumpkin puree, eggs, vegetable oil, milk, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet ingredients and stir just until combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let the loaf cool in the pan for 10 to 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter to keep the loaf tender. For extra flavor, serve with butter, cream cheese, or a dusting of powdered sugar.
