Ingredients
  

  • 1/2 cup cold water
  • 1/2 cup boiling water
  • 2 scoops (approx. 40-50g) unflavored protein powder
  • 1/4 cup erythritol or another natural sweetener
  • 1 teaspoon pure vanilla extract
  • Pinch of sea salt
  • 1-2 tablespoons unflavored gelatin powder
  • 1 cup unsweetened almond milk
  • Optional: 1/2 cup fresh berries or fruit pieces

Method
 

  1. In a small bowl, sprinkle the gelatin powder over the 1/2 cup of cold water and let it sit for 5-10 minutes to bloom.
  2. In a small saucepan, bring the 1/2 cup of boiling water to a rolling boil.
  3. Remove the saucepan from heat and add the bloomed gelatin mixture to the hot water, whisking continuously until dissolved.
  4. In a separate mixing bowl, combine the dissolved gelatin mixture, unsweetened almond milk, erythritol, vanilla extract, and a pinch of salt, whisking until well combined.
  5. Gradually add the protein powder to the liquid mixture, whisking constantly until smooth.
  6. Fold in any optional fresh berries or fruit pieces.
  7. Carefully pour the mixture into serving dishes or a mold and refrigerate for at least 3-4 hours until set.
  8. Serve chilled and enjoy.

Notes

Ensure to bloom gelatin in cold water first. Adjust sweetness to taste before chilling. Store in an airtight container for up to 4-5 days.
