  • 1 wheel Brie cheese about 8 ounces
  • 1 cup unsalted roasted pistachios shelled and chopped
  • 1/4 cup honey
  • 1 tablespoon fresh rosemary finely chopped (or 1 teaspoon dried)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 package puff pastry (2 sheets), thawed
  • 1 egg beaten (for egg wash)
  • Fresh cranberries or pomegranate seeds optional garnish

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Combine chopped pistachios, honey, rosemary, sea salt, and black pepper, mixing until well coated.
  3. On a lightly floured surface, cut the thawed puff pastry into 3x3-inch squares.
  4. Place a Brie cube on each pastry square and top with 1-2 teaspoons of the pistachio mixture.
  5. Fold the corners of the pastry over the Brie and pinch them firmly to seal.
  6. Brush the tops of the sealed pastry bites with beaten egg to achieve a glossy finish.
  7. Bake for 15-20 minutes, or until the pastry is golden brown and puffed.
  8. Allow to cool slightly, then garnish with fresh cranberries or pomegranate seeds if desired.
  9. Serve warm, optionally with a drizzle of honey or fig jam.

Notes

These elegant bites are perfect for parties and can be prepared ahead of time and baked just before serving. For best results, ensure the puff pastry is fully thawed but still cold when working with it.
