Ingredients

  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons unsweetened cocoa powder
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) buttermilk
  • 1 tablespoon red food coloring
  • 8 ounces (226g) cream cheese, softened
  • ½ cup (113g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method

  1. Preheat your oven to 375°F (190°C) and line a 15x10-inch jelly roll pan with parchment paper, greasing it lightly.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs one at a time, followed by stirring in the vanilla extract.
  5. In a small bowl, whisk together the buttermilk and red food coloring. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture.
  6. Pour the batter evenly into the prepared pan and bake for 12-15 minutes.
  7. While the cake bakes, dust a clean kitchen towel with powdered sugar and prepare for rolling.
  8. Once baked, invert the cake onto the sugared towel and carefully peel off the parchment paper. Roll the cake with the towel and let it cool completely.
  9. Prepare the cream cheese filling by beating the softened cream cheese and butter until smooth, then gradually adding the powdered sugar, vanilla extract, and pinch of salt.
  10. Once the cake is cool, unroll it carefully, spread the filling evenly, and re-roll without the towel.
  11. Wrap the rolled cake tightly in plastic wrap and refrigerate for at least 1-2 hours.
  12. Before serving, dust with powdered sugar, slice, and enjoy.

Notes

Do not overbake. Roll the cake while warm to avoid cracks. Chill thoroughly after assembling.
