Ingredients

  • 2 packages (3 ounces each) strawberry or raspberry flavored gelati
  • 4 cups boiling water, divided
  • 1 cup cold water
  • 1 cup fresh strawberries or raspberries, hulled and sliced (optional)
  • 1/2 cup whipped cream or coconut cream (for serving, optional)

Method

  1. Prepare Your Workstation: Gather all your ingredients and equipment.
  2. Boil Water: Bring 2 cups of water to a rolling boil.
  3. Dissolve Gelatin: In a medium-sized heatproof bowl, empty both gelatin packages and pour the boiling water over them, whisking continuously for at least 2 minutes until completely dissolved.
  4. Add Cold Water: Stir in the remaining 2 cups of cold water (or fruit juice if using).
  5. Incorporate Fruit (Optional): Allow the mixture to cool for about 15-20 minutes before gently folding in fresh fruit if desired.
  6. Pour into Dish: Pour the gelatin mixture into a 9x13 inch baking dish or gelatin mold.
  7. Chill and Set: Refrigerate for at least 4 hours or overnight until fully set.
  8. Serve: Cut into squares or unmold, serving plain or with whipped cream.

Notes

Ensure to avoid adding fresh pineapple, kiwi, figs, and papaya as they contain enzymes that prevent gelatin from setting. Store any leftovers in an airtight container in the refrigerator.
