Pink Gelatin Cubes for Losing Weight

Method
 

  1. In a heatproof bowl, sprinkle the unflavored gelatin over 1/4 cup cold water and let it sit for 5 minutes to bloom.
  2. Pour the boiling water over the sugar-free strawberry or raspberry gelatin and stir until completely dissolved.
  3. Stir in the bloomed unflavored gelatin until fully melted and smooth.
  4. Add the 1 cup cold water and, if using, the lemon juice and a few drops of pink food coloring. Mix well.
  5. Whisk in the unsweetened yogurt or Greek yogurt until the mixture is smooth and evenly pink.
  6. Pour the mixture into a lightly greased square or rectangular dish and refrigerate for 3 to 4 hours, or until fully set.
  7. Once firm, cut into small cubes and serve chilled.

Notes

For the smoothest texture, whisk the yogurt in gradually. If you want a stronger pink color, add the food coloring one drop at a time. Store the cubes covered in the refrigerator and serve within 2 to 3 days.
