  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, mini chocolate chips, and salt. Stir until evenly mixed.
  2. Add the peanut butter, honey, and vanilla extract to the dry ingredients. Stir until the mixture is well combined and forms a sticky dough.
  3. Using clean hands or a small cookie scoop, roll the mixture into bite-sized balls, approximately 1 inch in diameter.
  4. Place the energy bites on a baking sheet or plate lined with parchment paper.
  5. Refrigerate the energy bites for at least 30 minutes to firm up.
  6. Once chilled, transfer the bites to an airtight container and store in the refrigerator for up to 1 week.

Notes

Feel free to substitute almond butter for peanut butter or add dried fruit for extra flavor.
