Ingredients

Base
  • 1 cup unsweetened almond milk or any plant-based or dairy milk
  • 0.25 cup chia seeds
  • 2 tbsp natural peanut butter no added sugar or oil
  • 1 tbsp maple syrup or honey
  • 0.5 tsp pure vanilla extract
  • 1 pinch sea salt
Toppings (Optional)
  • 1 tbsp peanut butter optional drizzle
  • 1 tbsp cacao nibs or mini chocolate chips for crunch
  • 0.5 cup fresh berries e.g., strawberries, raspberries, blueberries
  • 0.25 cup granola for extra texture and fiber
  • 0.5 banana sliced banana or mashed into pudding for variation
  • 1 tbsp shredded coconut optional topping

Method

  1. In a medium bowl, combine almond milk, chia seeds, peanut butter, maple syrup, vanilla extract, and a pinch of salt.
  2. Whisk the mixture for 30 to 60 seconds to evenly distribute the chia seeds and prevent clumps.
  3. Let the mixture sit for 5 minutes, then whisk again to break up any clumps.
  4. Cover the bowl or transfer to small jars with lids. Refrigerate for at least 30 minutes or overnight for best results.
  5. Before serving, stir well and top with peanut butter, berries, granola, or other desired toppings.

Notes

To adjust consistency, add more chia seeds for thickness or more milk for a lighter texture. Blend after chilling for a smoother, mousse-like version. Stores well in the fridge for up to 5 days.
