Ingredients

  • 4 cups ripe peaches, peeled, pitted, and diced
  • 4 packets unflavored gelatin powder (about 1 oz or 4 tablespoons)
  • 2 cups boiling water
  • 2 cups cold water
  • 1/4 to 1/2 cup natural sweetener
  • 1 tablespoon lemon juice, freshly squeezed
  • 2 scoops collagen peptides (optional)

Method

  1. Prepare the Peaches: If using fresh peaches, peel, pit, and dice them into small pieces. Mash or blend half for smoother texture if desired.
  2. Bloom the Gelatin: Sprinkle gelatin powder over cold water in a mixing bowl and let it sit for 5-10 minutes.
  3. Dissolve the Gelatin: Bring boiling water to a boil and pour it over the bloomed gelatin, whisking until dissolved.
  4. Add Flavor & Sweetness: Stir in natural sweetener and lemon juice, adjusting taste as needed.
  5. Incorporate Peaches: Fold in diced peaches and optional collagen peptides, whisking thoroughly.
  6. Pour and Chill: Pour mixture into baking dish or molds.
  7. Set the Gelatin: Refrigerate for at least 4-6 hours, preferably overnight, until firm.
  8. Serve: Cut into squares or invert from molds and serve chilled.

Notes

Ensure to properly bloom the gelatin and avoid mixing in high-acid fruits for best results.
