Ingredients
  

  • 6 packets unflavored gelatin (0.25 oz each)
  • 4 cups cold water, divided
  • 4 cups boiling water, divided
  • 1/2 cup sweetener of choice
  • 1/2 teaspoon natural flavor extracts (e.g., strawberry, lemon, lime, blueberry)
  • 1-2 drops food coloring gels (pink, yellow, green, blue, purple)
  • 1/2 cup plain Greek yogurt or 2 scoops collagen peptides (optional)

Method
 

  1. Prepare a 9x13 inch baking dish or a loaf pan by greasing it lightly or lining with parchment paper.
  2. In separate small bowls, bloom the gelatin in 1/2 cup of cold water each for 5-10 minutes.
  3. Dissolve the bloomed gelatin by adding 1 cup of boiling water and whisk until fully dissolved, then stir in sweetener and flavor extract.
  4. Color the mixture and pour into the prepared pan. Chill until set.
  5. Repeat for remaining layers, ensuring they are fully set but slightly tacky before adding the next layer.
  6. For a creamy layer, mix Greek yogurt with a gelatin mixture after it cools slightly.
  7. After all layers are poured and chilled, refrigerate for at least 4-6 hours or overnight.
  8. Unmold and serve by running a knife around the edges and slicing as desired.

Notes

Each layer must chill for 20-30 minutes to achieve the right consistency. Store in an airtight container in the refrigerator for up to 5-7 days.
