Ingredients

Main Ingredients
  • 1/2 lb regular pork sausage
  • 1/2 small onion or 1 large leek, diced
  • 1 cup fresh spinach roughly chopped
  • 1/2 cup cheddar cheese grated
  • 1/2 cup monterey jack cheese grated
  • 3 large croissants cut or torn into 1-2 inch cubes
Egg Mixture
  • 6 large eggs
  • 3/4 cup whole milk
  • 1/2 cup half and half
  • 3/4 tsp dry mustard
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp paprika
  • 1/8 tsp garlic powder

Equipment

  • large skillet
  • Medium mixing bowl
  • 8x8-inch baking pan
  • Whisk

Method

Preparation
  1. In a large skillet, brown the sausage over medium heat until fully cooked; transfer to a paper towel-lined plate to remove grease, then place in a medium mixing bowl. Wipe the pan clean, then sauté the onion until translucent, add spinach, and wilt. Add the onion and spinach to the bowl with the sausage, then toss with the cheese and cubed croissants, spreading the mixture into an 8x8-inch baking pan.
Assemble & Chill
  1. In a separate medium mixing bowl, whisk together the eggs, then whisk in the milk, half and half, dry mustard, salt, black pepper, paprika, and garlic powder. Pour this egg mixture over the ingredients in the baking pan, ensuring all croissant pieces are well-soaked. Cover the pan and refrigerate for at least 8 hours, preferably overnight.
Bake & Serve
  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Bake the uncovered casserole for 45-50 minutes, or until the center is set and the top is golden brown. Remove from the oven and allow it to rest for 10 minutes before serving.

Notes

This casserole requires at least 8 hours of refrigeration, making it an ideal make-ahead dish for busy mornings. Ensure croissants are well-soaked to prevent dry spots. For best results, allow it to rest for 10 minutes before serving.
