Ingredients

  • Four 6-ounce salmon fillets
  • One pound of fresh asparagus spears, trimmed
  • 3 tablespoons extra virgin olive oil
  • 2 medium lemons
  • 4 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon sea salt or kosher salt
  • ½ teaspoon freshly ground black pepper

Method

  1. Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with parchment paper.
  2. Wash the asparagus spears and snap off the woody ends. Lay them on one side of the prepared baking sheet.
  3. Pat the salmon fillets dry with paper towels and place them on the other side of the baking sheet, leaving space between each piece.
  4. In a small bowl, whisk together the olive oil, minced garlic, juice of one lemon, chopped dill, chopped parsley, salt, and black pepper.
  5. Drizzle half of the olive oil mixture over the asparagus and toss to coat. Brush the remaining mixture over the salmon fillets.
  6. If desired, place a thin slice of lemon on top of each salmon fillet.
  7. Transfer the baking sheet to the oven and roast for 12-18 minutes until the salmon is cooked through and flakes easily, and the asparagus is tender-crisp.
  8. Serve immediately with an extra squeeze of fresh lemon juice on top.

Notes

Use fresh, high-quality ingredients for the best results. Adjust cooking time depending on thickness of salmon fillets and choose vegetables that roast well.
