Ingredients

  • 2 cups fresh orange juice
  • 3 cups granulated sugar, divided
  • 4 packets unflavored gelatin (about 1 ounce total)
  • 1 tablespoon pectin (optional)
  • 1 tablespoon lemon juice
  • 1 tablespoon orange zest
  • 1/8 teaspoon salt
  • 1/2 cup powdered sugar (for coating)

Method

  1. Line an 8x8 inch baking pan with parchment paper and lightly grease it.
  2. In a small bowl, bloom the gelatin by sprinkling it over 1/2 cup of the orange juice and letting it sit for 5-10 minutes.
  3. In a medium saucepan, combine the remaining 1 1/2 cups orange juice, 2 cups sugar, pectin (if using), lemon juice, orange zest, and salt. Whisk thoroughly.
  4. Heat the mixture over medium heat until it gently boils, stirring constantly for about 5 minutes.
  5. Remove from heat and add the bloomed gelatin, whisking until dissolved.
  6. Pour the mixture into the prepared pan, tapping to release air bubbles. Let it cool for 30 minutes then chill in the refrigerator for at least 4 hours.
  7. Once set, lift the jelly out using the parchment paper, and cut into desired shapes.
  8. Coat in powdered sugar before serving to prevent sticking.

Notes

Using fresh orange juice ensures the best flavor. Store in an airtight container at room temperature. Will keep for 1-2 weeks.
