Ingredients

  • 2 cups fresh orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons low-glycemic sweetener (like stevia, erythritol, or monk fruit)
  • 1 tablespoon unflavored gelati
  • 1/2 cup water
  • 1 cup plain full-fat Greek yogurt
  • 1 teaspoon vanilla extract

Method

  1. In a medium saucepan, sprinkle the unflavored gelatin powder over 1/2 cup of cold water and let it bloom for 5 minutes.
  2. Place the saucepan over low heat and whisk gently until the gelatin is completely dissolved and clear.
  3. Stir in the fresh orange juice, orange zest, and sweetener. Whisk thoroughly and let it cool completely.
  4. In a separate bowl, combine Greek yogurt and vanilla extract, whisking until smooth.
  5. Once the orange gelatin mixture is cooled, gradually add it to the Greek yogurt mixture, whisking until well blended.
  6. Pour the mixture into serving dishes and refrigerate for 4-6 hours or overnight until set.

Notes

Ensure that the gelatin mixture is completely cooled before combining it with yogurt to prevent curdling. Store in an airtight container in the refrigerator for up to 5 days.
