Ingredients
  

  • 3 boxes sugar-free gelatin (cherry, lime, orange)
  • 3 cups boiling water
  • 3 cups cold water
  • 2 packets unflavored gelati
  • 1 cup boiling water
  • 2 cups high-protein milk or cream
  • 1/2 cup low-carb sweetener
  • 1 teaspoon pure vanilla extract

Method
 

  1. Prepare the Colored Gelatin Layers: Pour each flavored gelatin into a separate bowl, add 1 cup of boiling water, whisk until dissolved, and stir in 1 cup of cold water. Pour into baking dishes and refrigerate for 3-4 hours.
  2. Cut the Gelatin Cubes: Cut the set gelatin into uniform cubes and transfer to a mixing bowl.
  3. Prepare the Creamy White Layer: Bloom unflavored gelatin over cold water, add boiling water, mix until clear, then stir in high-protein milk, sweetener, and vanilla extract. Let it cool slightly.
  4. Assemble Your Mosaic Gelatin: Grease a serving dish, arrange colored cubes, and pour the creamy mixture over them. Shake gently to settle.
  5. Final Chill and Serve: Chill for 4-6 hours or overnight, then slice and serve.

Notes

Ensure the creamy layer is cooled before pouring to prevent melting the colored cubes.
