Ingredients
  

  • 1 (20-ounce) can of crushed pineapple, undrained
  • 2 packets (0.25-ounce each) unflavored gelatin powder
  • 1/2 cup granulated sugar
  • 1 (12-ounce) can of evaporated milk, chilled
  • 1 (14-ounce) can of sweetened condensed milk, chilled
  • 1 1/2 cups water, divided
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. Sprinkle the unflavored gelatin powder over 1/2 cup of cold water and let it bloom for 5 minutes.
  2. Place the saucepan over low heat and add the granulated sugar to the gelatin mixture. Stir continuously until dissolved.
  3. Pour the undrained crushed pineapple into the saucepan and stir well to combine.
  4. Add the remaining 1 cup of cold water and mix to help cool down the mixture.
  5. In a large mixing bowl, whisk together the chilled evaporated milk, chilled sweetened condensed milk, and vanilla extract.
  6. Slowly pour the pineapple-gelatin mixture into the large bowl while whisking continuously.
  7. Carefully pour the entire mixture into a prepared baking dish or mold.
  8. Cover with plastic wrap and chill in the refrigerator for at least 4-6 hours or overnight until set.
  9. Slice into squares or scoop out for serving. Garnish if desired and serve cold.

Notes

Bloom gelatin properly for best results. Avoid boiling when dissolving it. Store in an airtight container in the fridge for up to 5 days.
