Ingredients
  

  • Unflavored gelatin powder
  • Plain full-fat Greek yogurt
  • Filtered water
  • Erythritol or monk fruit sweetener
  • Vanilla extract
  • Optional: Fresh berries

Method
 

  1. In a small saucepan, sprinkle the unflavored gelatin powder over ΒΌ cup of cold water and let it sit for 5-10 minutes to bloom.
  2. Place the saucepan over low heat and gently whisk the bloomed gelatin until completely dissolved, then remove from heat.
  3. In a medium mixing bowl, whisk together the Greek yogurt, remaining water, sweetener, and vanilla extract until smooth.
  4. Slowly pour the warm gelatin mixture into the yogurt mixture while whisking continuously for about one minute.
  5. Pour the mixture into individual serving dishes, adding fresh berries if desired.
  6. Chill in the refrigerator for 2-4 hours or until set. Serve and enjoy.

Notes

Ensure to bloom the gelatin properly and avoid boiling it. Taste the mixture before adding gelatin to adjust sweetness.
