Ingredients

Noodles
  • 2 low-carb tortillas e.g., Mission Carb Balance or La Banderita
  • 1 tsp salt for boiling water
Sauce
  • 1 cup your favorite sauce e.g., marinara, Alfredo, or stir-fry
Optional
  • 1 tbsp butter or oil for pan-frying

Method

  1. Step 1: Lay a tortilla flat on your cutting board. Roll it gently into a loose tube and slice into strips using a pizza cutter or knife. Choose your preferred width—thin for spaghetti, wide for fettuccine.
  2. Step 2: Bring a pot of salted water to a light boil. Add tortilla strips and boil for just 30 to 60 seconds. Watch closely to avoid sogginess.
  3. Step 3: Drain quickly and toss noodles with your favorite sauce while still warm to lock in texture and flavor.
  4. Step 4 (Optional): For firmer texture, pan-fry noodles in a hot skillet with butter or oil for 1 minute. This adds bite and prevents sticking.

Notes

Choose Mission Carb Balance tortillas for the best results. Avoid overboiling to keep noodles firm. Pan-frying after boiling enhances texture. Great for keto pasta, ramen, or creamy dishes.
