Ingredients
  

  • 2 tablespoons olive oil
  • 1 ½ pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 large yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 cup cauliflower florets
  • 4 ounces cream cheese, softened
  • ½ cup sour cream
  • ½ cup chicken broth
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • Optional: ¼ teaspoon red pepper flakes

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the cubed chicken and cook for 5-7 minutes until lightly browned. Remove and set aside.
  3. In the same skillet, add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
  4. Stir in the broccoli and cauliflower florets. Cook for 5-7 minutes until they start to soften.
  5. Reduce heat to low and add the softened cream cheese, sour cream, and chicken broth. Stir until the cream cheese melts and the sauce is smooth. Season with salt, pepper, and red pepper flakes.
  6. Return the cooked chicken to the skillet and combine everything. Transfer to the prepared baking dish and spread evenly.
  7. Top with a mixture of shredded cheddar and grated Parmesan cheese.
  8. Bake for 20-25 minutes until bubbling and cheese is melted and golden brown.
  9. Let it rest for 5-10 minutes before serving and garnish with fresh parsley.
