Method
 

  1. Brew the espresso or strong coffee and set it aside.
  2. In a small saucepan over medium-low heat, whisk together the almond milk, pumpkin puree, sugar-free white chocolate syrup, maple syrup or sweetener, pumpkin pie spice, and vanilla extract until hot and well combined. Do not let it boil.
  3. For a frothier drink, use a milk frother or whisk vigorously for 20 to 30 seconds until the mixture is smooth and slightly foamy.
  4. Pour the hot coffee into a mug and top with the pumpkin white mocha mixture.
  5. Add whipped topping and a light sprinkle of ground cinnamon, if desired, and serve immediately.

Notes

For a sweeter drink, adjust the maple syrup or zero-calorie sweetener to taste. Oat milk can be used instead of almond milk for a creamier texture.
