Ingredients

  • 1 (3-ounce) package Lemon-Flavored Gelatin Mix
  • 2 medium-sized fresh lemons
  • 1/4 cup granulated sugar (or to taste)
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup ice cubes
  • Optional Garnish: Fresh mint sprigs, lemon slices, or fresh berries

Method

  1. Zest the fresh lemons and set aside, then juice them to yield about 1/4 cup of juice.
  2. In a medium mixing bowl, pour in the contents of the gelatin mix and add 1 cup of boiling water. Whisk until dissolved (about 2 minutes).
  3. Add 1 cup of cold water and the fresh lemon juice to the mixture, stirring gently.
  4. Mix in the granulated sugar and lemon zest, adjusting sugar to taste.
  5. For a faster set, place the bowl over an ice bath, stirring every 5 minutes until slightly thickened.
  6. Pour the mixture into a serving dish or molds.
  7. Refrigerate for at least 4 hours or overnight until set.
  8. Garnish with fresh mint or lemon slices before serving.

Notes

Ensure to dissolve gelatin fully and chill completely for the best texture.
