Ingredients

Cake Base
  • 180 g self-raising flour or plain flour with 2 tsp baking powder
  • 0.5 tsp baking powder
  • 1 pinch salt
  • 80 g unsalted butter softened
  • 225 g caster sugar
  • 90 ml natural or Greek yogurt
  • 1.5 tbsp chia seeds
  • 2.5 tsp lemon zest from about three medium lemons
  • 1 tbsp lemon juice from one medium lemon
  • 3 large eggs room temperature
Lemon Syrup Soak
  • 35 g caster sugar
  • 30 ml water
  • 2 tbsp lemon juice
Lemon Icing
  • 150 g icing sugar sifted
  • 1.5 tbsp lemon juice from two lemons
  • 2 lemon zest
  • 2 tsp chia seeds

Method

  1. Preheat oven to 350°F/180°C (160°C fan). Line and lightly grease a loaf tin.
  2. Sift flour, baking powder, and salt in a bowl. Set aside.
  3. Beat softened butter with mixer until smooth. Add caster sugar and beat into a pale paste.
  4. In another bowl, combine yogurt, chia seeds, lemon zest, and juice. Add to butter mix and combine.
  5. Add eggs one at a time, each with a spoonful of flour mixture. Mix on low speed until combined.
  6. Add remaining flour mixture and mix until just combined. Beat briefly for 10 seconds until silky.
  7. Pour batter into loaf tin. Level top and bake for 35–40 minutes until golden and skewer comes out clean.
  8. While baking, prepare syrup: heat sugar and water in pan until dissolved. Add lemon juice off heat.
  9. When cake is done, prick top and pour syrup over. Let sit in tin 20 minutes. Cool on rack.
  10. For icing, mix icing sugar with lemon juice until pourable. Spoon over cooled cake, sprinkle with zest and chia.

Notes

Use organic lemons for best zest quality. Don’t overmix the batter. Store cake in an airtight container for up to five days or freeze individual slices.
