Ingredients
  

  • 3 cups unbleached all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast
  • 1 cup warm milk (between 105-115°F)
  • 2 large eggs, room temperature
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Oil for frying
  • 1 cup powdered sugar for glaze

Method
 

  1. Activate the yeast by combining warm milk, 1 teaspoon of sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Mix the remaining sugar, melted butter, eggs, vanilla, and salt into the yeast mixture. Gradually add flour and mix until just combined.
  3. Knead the dough for 5-7 minutes until smooth and elastic. Let rise in a greased bowl covered for 1-1.5 hours until doubled.
  4. Punch down the dough and roll it out to 1/2 inch thickness, then cut out donuts.
  5. Let the donuts rise again for 30-45 minutes until puffy.
  6. Heat oil in a pot to 350-360°F and fry donuts for 60-90 seconds per side until golden brown.
  7. Drain excess oil and prepare the glaze by whisking powdered sugar, warm milk, and vanilla.
  8. Dip warm donuts into the glaze, allowing excess to drip off, and set them on a wire rack.

Notes

Ensure yeast is fresh for best results. Avoid overcrowding the frying pot to maintain oil temperature.
