Ingredients

From Scratch Chips
  • 2 cups shredded low-moisture mozzarella cheese
  • 1 cup blanched almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt plus extra for topping
  • 0.5 teaspoon chili powder
  • 1 egg optional, for binding if needed
  • 1 tablespoon psyllium husk optional, for texture
  • 1 teaspoon black pepper to taste

Method

  1. Preheat oven to 350°F (175°C). In a heatproof bowl, microwave mozzarella cheese in 30-second intervals until melted. Add almond flour, garlic powder, chili powder, salt, and pepper. Knead into a smooth dough.
  2. Place dough between parchment sheets and roll to 1/8 inch thick. Cut into triangles with a knife or pizza cutter and arrange on lined baking sheets.
  3. Bake for 12–14 minutes or until edges are golden. Sprinkle with salt immediately after baking. Cool slightly before serving.
  4. Air Fryer Method: Air fry triangles at 350°F (175°C) for 8–10 minutes, flipping halfway through.
  5. Fried Method: Fry in avocado oil at 350°F (175°C) for 1–2 minutes. Drain on paper towels and salt while hot.
  6. Quick Method: Cut store-bought low carb tortillas into triangles. Spray with oil, season, and bake at 375°F (190°C) for 7–10 minutes or air fry at 350°F (175°C) for 6–8 minutes, flipping halfway.
  7. Optional: Brush with lime juice or water for oil-free baking and seasoning adherence.

Notes

Roll dough thin for crispier chips. Cool completely before storing. Try flavor variations like nacho cheese, ranch, chili lime, cinnamon sugar, or everything bagel.
